Vegan No-Churn Soft Serve

Are you tired of making coconut flavored vegan ice cream at home? We sure are. It’s nearly impossible to mask the taste of the coconut. Blending frozen bananas to make a quick ice cream is a healthier and super quick option as well, but it obviously tastes likes bananas. This vegan no-churn soft serve is definitely our easiest recipe yet! We were so excited to learn about Silk’s heavy whipping cream and love using it for whipped cream. Turns out it also freezes very nicely and the final product has a really creamy soft serve texture. The basic strawberry variation of this ice cream is what inspired the flavoring for the buttercream in our vegan chocolate cake recipe.

This vegan no-churn soft serve recipe makes a single serving. You can multiply the ingredients for more servings, but try to use a larger tray or multiple trays so that the ice cream layer can remain thin.

Vegan No-Churn Soft Serve

Super quick vegan soft serve ice cream that can be made in as little as 15 minutes! Simply add in your favorite ingredients to change up the flavor.

Ingredients  

  • ½ cup Silk heavy whipping cream
  • ½ tbsp cocoa powder/ strawberry powder/ or vanilla extract
  • 1 tbsp granulated sugar (or sweetener of your choice)

Instructions 

  • First place a metal baking tray into the freezer for 5-10 minutes. We used a quarter sheet baking tray.

  • Measure out your ingredients. You can make any flavor of your choice. The higher the water content is of your flavoring ingredients, the more ice crystals will form that will make your ice cream less smooth.
  • Mix the ingredients together.
  • Spread the cream over the surface of the baking tray. Place it in the freezer for 15-20 minutes.
  • Remove the tray and scrape the ice cream around using a rubber spatula or other non-metal utensil. Form it into a ball so that you can easily scoop it into a bowl or cup.
  • Enjoy!

Notes

  • We have also whipped the cream first (before adding the flavorings) and then frozen it in a cup for about 20 minutes.
  • How fast your ice cream freezes will depend on the temperature and efficiency of your freezer.
